Liver and Salad and Potatoes

Total Cook Time

60 minutes

Ingredients

  • 4 liver steaks. About 200g each.
  • plain flour
  • 1 brocolli
  • 1 red pepper (female… 4 sides)
  • 1 apple
  • handful of walnuts or other nuts, chopped.
  • 1 lemon juiced
  • 1 tsp mustard
  • 1 tbsp honey
  • 1 small onion
  • fresh green pepper
  • 1 large onion
  • potatoes

Method

FOR THE LIVER:

  1. Wash the liver, put salt and flour on both sides.
  2. Fry over a medium heat. Around 3-4 minutes per side. Light rosa colour is ideal.

FOR THE SALAD:

  1. Chop brocolli into thin slices.
  2. Chop pepper and apple into small bits.
  3. Add handful of chopped nuts.
  4. Stir in heaped tablespoon of honey.
  5. Mix the lemon juice, olive oil (and optionally the mustard) together.
  6. (5) should be added right before eating. Not before.

FOR THE SAUCE:

  1. In the same pan you cooked the liver while still hot, pour half a glass of water and let it bubble for a moment (removes the encrusted flavours into a liquid state).
  2. Add finely chopped onions and a teaspoon of fresh green pepper.
  3. Let it cook for a few minutes on a medium heat.
  4. Add some cream and let it reduce until the sauce thickens.
  5. Season with salt.

FOR THE CARAMALISED ONIONS:

  1. Chop the large onion in slices that creates onion spirals.
  2. Cook in oil over a low heat for 15-20 minutes. Stir occasionally to prevent them from sticking. Add a little water if necessary.
  3. Remove from the heat when they become sticky and caramalised.

Notes

  1. Peppers/Paprikas can be female (4 sides) or male (3 sides). Female peppers tend to be sweeter.
  2. The sauce recipe is multi-purpose. For example you could replace the green pepper with mustard and you’d have a mustard sauce. Or with the ingredient that you fancy. Same method lots of possible results :)
