Miso Soup with Beef and Kale

Total Cook Time

15 minutes

Ingredients

  • 250g beef (rump steak)
  • 3-4 spring onions
  • 1 tbsp white miso paste
  • 1 tbsp bouillon powder
  • 600-800ml water

Method

  1. Fry the steak in a pan briefly, when it turns brown on one side, flip over and sear on the other side.
  2. Fry 3-4 finely chopped spring onions in pan.
  3. Dissolve miso paste and bouillon powder in boiling water.
  4. Boil finely chopped cavolo nero or cabbage or fry in the pan used to cook the steak.
  5. Lade the soup into bowls.
  6. Drop slices of the beef into bowls.
  7. Serves two.

Notes

Cook the pieces of meat for seconds rather than minutes to keep them supple and rare.

Allowing the miso to boil will make it cloudy and alter its taste but a brief simmer will do no harm

Shredded savoy cabbage, purple sprouting brocolli or pak choi would be perfect here instead of the kale.

Add wide or thin noodles, or even rice to make a more substantive dish.
