- 2 tsp cumin
- 2 tsp garam masala (or curry powder)
- 2 tsp chilli powder
- 1 tsp chilli flakes
- 100ml water or bone broth
- 1/2 zucchini
- 1/4 red chilli finely sliced
- 10g butter
- optional: 3 mushrooms finely sliced
- optional: 1 carrot finely sliced
- coriander finely chopped
Method
FOR THE CURRY BEEF:
- On a medium heat sauté the onion and mushroom in the coconut oil.
- Add the beef, the spices and cook for a few minutes.
- Add the water/bone broth, cover and cook for 15-20 minutes.
FOR THE ZOODLES:
- Add 4-5 tbsp of water and 10g butter to a pan on medium heat.
- Add the fresh chilli and cook for 2-3 minutes.
- Add the zoodles to the pan. Cook for a further 2-3 minutes.
Notes
Serve the dish with a coriander garnish.
With a 20 minute cook time the beef doesn’t get a chance to tenderise. Very chewy!!
Alternatively tenderise the meat by placing the it in a covered casserole dish in the oven for 80 minutes @ 180C :)
