Chicken fried rice with mango and basil

Ingredients
- 1/2 tbsp coconut oil or olive oil
- 4 spring onions trimmed and thinly sliced
- 2 garlic cloves, finely chopped
- 1 x 300g chicken breast
- 1 small carrot, peeled and diced
- 5 baby sweetcorn, cut in half lengthways
- 80g frozen peas
- 400g pre-cooked rice
- 1 1/2 tbsp soy sauce
- 1 tsp sesame oil
- 1 mango, peeled and cut into cubes
- 2 red chillies, finely sliced, remove the seeds if you don’t like it hot
- small bunch of basil, roughly torn up
Method
- Melt the oil in a pan or wok on a high heat, then add spring onions and garlic. Fry for 30 seconds.
- Add the chicken slices and stir-fry for 2 minutes.
- Add the carrot, sweetcorn and frozen peas.
- Stir fry for 3 minutes. The chicken should be cooked through.
- Add the pre-cooked rice to the pan.
- Add a splash of water to the pan. Let it steam up. Perhaps cover the pan for a short period.
- Take the pan off the heat. Stir through the sesame oil and soy sauce.
- Add the mango pieces.
- Garnish with the basil and fine chilli slices.
Notes
Serves 2. Light and fresh dish.
I like to pre-cook my chicken in the oven for 30-35 minutes and then add the cooked chicken to the stir fry.
I also like to use pre-cooked rice that you can heat up in the 2 minutes in the microwave.
