Creamy Chicken Pasta
Total Cook Time
50 minutes
Ingredients
- 2 tbsp olive oil
- 500g chicken breast
- 2 celery sticks
- 2 gloves of garlic
- 2-300ml cream
- 1 small onion
- 3-4 parsley stalks
- parmesan cheese
Method
- Heat oven to 180C. Place chicken breasts in oven and bake for 40-50 minutes.
- Cook pasta with a dash of salt for 20 minutes until “al dente”.
- The sauce takes about 10 minutes to cook. Start by finely chopping the veg.
- Strip leaves from the parsley and finely chop the stalks. Keep them separate.
- Add two tablespoons of olive oil to pan. Add all the veg except parsley leaves.
- Saute over a medium heat.
- Strip thyme leaves from a few stalks of thyme. Add leaves to the vegetables.
- Tear the chicken into small bits and add to frying pan.
- Add cream to the vegetables and chicken. Turn heat down low.
- Grate 50-100 parmesan into pan and cook for a few more minutes. Add the parsley.
- When cream has reduced slightly pour entire mix over pasta and serve.
- Grate more parmesan over top to serve [optional].
Notes
- Mushrooms work nicely in this too.
