Slow Cooker Chicken Chilli
Total Cook Time
40 minutes
Ingredients
- 500g chicken
- 1 onion, diced
- 1 cup mixed bell peppers, diced
- 1 tsp cumin
- 1/2 tsp coriander
- 1 tsp chilli powder
- Salt and pepper
- 4-500ml chicken stock
- 1 X 400g tomatoes
- Parsley to garnish
- 1-2 red chilli’s [optional]
Method
- Preheat oven to 180C/fan.
- On baking paper place the chicken and cook for 30 minutes.
- Wait 10 minutes then start on the veg part of this dish. Add a little olive oil to a medium saucepan and sautee the onions on a low heat until nearly translucent.
- Add spices and chopped peppers. Add the optional chilli’s at this point too.
- Add tomato and chicken stock.
- Cover and simmer on a low-medium heat.
- When the chicken is cooked, use a fork to pull the chicken into strips e.g pulled pork style.
- Add the chicken and cook for a further 5-10 minutes.
Notes
There is nothing slow about this dish :) Its a life-hack for a slow cooker style dish. The spices don’t have the opportunity to infuse into the chicken just as much, but it still tastes great.
