Baked Beans with Chorizo and Feta

Total Cook Time

40 minutes

Ingredients

  • 100g chorizo thinly sliced (1/2 sausage)
  • 2 garlic cloves finely chopped
  • few sprigs of thyme or rosemary chopped
  • 40ml red wine vinegar
  • 2 tbsp tomato puree
  • 1 X 400g chopped tomatoes
  • Salt and Pepper
  • 1 X 400g cannellini beans
  • 4 large eggs
  • Splash of olive oil
  • 100g Feta cheese

Method

  1. Preheat the oven to 180c.
  2. Saute the chorizo in a frying pan on a medium-high heat until it starts to release its fat. The pan requires no fat as chorizo contains so much. Once the chorizo is beginning to caramelise, transfer chorizo and released oil to a dish and place in the oven to continue cooking. Keeping the oil adds to the unctuousness.
  3. Add a little olive oil to frying pan and cook until beginning to colour.
  4. Add the garlic, herbs, red wine vinegar, tomato puree and chopped tomatoes.
  5. Cook for a further few minutes until everything is blended.
  6. Take the mixture off the heat and add the cannellini beans. Pour into the dish containing the chorizo.
  7. Make 4 wells and into each pour an egg.
  8. Sprinkle with feta cheese.
  9. Drizzle with olive oil.
  10. Garnish with coarse black pepper.
  11. Bake for 15 minutes or until the eggs are just cooked.
