Broccoli Feta Salad
Total Cook Time
15 minutes
Ingredients
- 1 large head of broccoli
- 2-3 handfuls of cherry tomatoes, halved
- 100g feta cheese, crumbled or cubed
Method
MAIN DISH
- Bring a large pot of water to the boil.
- Add the broccoli to the pot of water and blanch for 60 seconds. You should see the broccoli turn a vibrant green.
- Drain the broccoli pieces and run under cold water.
- Lay a clean tea towel on the counter top and scatter the broccoli across it to steam dry. Dry broccoli will help the dressing cling to it.
- Combine the broccoli, feta and tomatoes in a serving bowl.
- Add a pinch of sea salt and ground pepper.
DRESSING
- 1 tsp dijon mustard + 3 tbsp olive oil + 1 tbsp white wine vinegar (+ optional 1/4 clove of garlic)
Notes
Lots of ways to embellish this one :) But not all at once….
- Add pine nuts or walnuts for extra crunch.
- Add chives (a quarter bunch, of 15g) chopped but with flowers intact.
- Add chopped fresh chilli.
- Add a splash more vinegar to pimp it up.
- Add crisp and golden diced streaky bacon (3 rashers).
