Chickpea Gnocchi

Total Cook Time

30 minutes

Ingredients

  • 2 cans chickpeas (480g)
  • 100g buckwheat flour
  • 45ml water

Method

  1. Drain the chickpeas and turn into a fine mix in a food processor.
  2. Empty the chickpea mix into a bowl and mix with 100g buckwheat flour and 45ml of water.
  3. Add a little sea salt and knead into a chickpea dough.
  4. Roll the mix into fat cigars.
  5. With a fork mark each roll and chop into gnocchi shapes.
  6. In batches cook in boiling water for 2-3 minutes. Make sure the water isn’t boiling too vigourously.
  7. Serve immediately.

Serving Ideas

Garlic, Pine Nuts and Sage: Cook some minced garlic, pine nuts and chopped sage in olive oil until golden. Then add in the cooked gnocchi and fry for a few minutes until crisp. Serve with lemon zest, salt and pepper sprinkled on top. Add moisture to the dish by tossing the gnocchi in some of the water left over from boiling them.

Bacon and Cream: Cook some chopped bacon, prosciutto or pancetta in a bit of olive oil over medium-low heat until nearly crisp. Stir in 1/2 cup heavy cream and a lot of pepper. Let the cream thicken slightly before adding the gnocchi.

Tomato Sauce: Tomato sauce like. Garnish with torn basil and/or grated Parmesan.

Notes

  1. Freeze gnocchi shapes (before cooking them!) for use later.
  2. Aesthetically not the prettiest but they taste fine….
  3. Chickpeas are good for you. The benefits.
