Hummus

Total Cook Time

15 minutes

Ingredients

  • 1 X 400g tin of chickpeas
  • liquid from the chickpeas tin
  • 3 tbsp tahini paste
  • juice from half a lemon, to taste
  • 1-2 garlic cloves, crushed
  • salt, to taste
  • olive oil, to top on serving

Method

  1. Drain the chickpeas and keep the liquid reserve.
  2. Make a loose paste from the tahini paste, lemon juice and garlic. Add a little of the reserved chickpea liquid to get the “loose” paste effect.
  3. Add the chickpeas to the food processor. Add the paste. Add a little salt.
  4. Whizz until smooth.
  5. Add more lemon juice, salt or reserved liquid as required. Taste.
  6. Serve with a drizzling of olive oil on top.

Notes

Olive oil is only a garnish in this recipe. Its not essential for the hummus.
