Marinara Sauce
Total Cook Time
40 minutes
Ingredients
- Olive oil
- 1 small onion
- 5 cloves of garlic
- splash of white wine (75ml)
- 1 x 400g chopped tomatoes
- 1 tablespoon of brown sugar
- Salt and pepper
- 150g of spaghetti
- parsley and basil, finely chopped
- handful of finely grated Parmesan
Method
- Put the chopped onion, garlic into olive oil and heat on a medium heat until coloured.
- Add white wine and simmer. Cook until almost all the wine has evaporated. 5 mins or so.
- Add tinned tomatoes (or chopped whole tomatoes if seasonally available).
- Add brown sugar, salt and pepper. Simmer for 20-30 minutes until the sauce has thickened.
- Cook the spaghetti.
- Serve with parmesan and a sprinkling of fresh basil leaves.
The secret to a great Marinara is a generosity of spirit when it comes to garlic, and a good splash of white wine cooked off in the sauce.
