Quinoa, Broccoli, Apple and Pomegranate
Total Cook Time
25 minutes
Ingredients
- 1 head of broccoli
- 2 apples
- 1 pomegranate
- 500g quinoa, boiled and left to cool
- 1/2 tsp salt
- 100ml lime vinaigrette
Method
- Prepare small florets of broccoli. Peel the stalk and chop it into bite sized pieces.
- Either par-boil the broccoli for a few minutes before dousing under cold water.
- Or fry the broccoli in a little olive oil till it retains a little bite and still has a vibrant green colour.
- Season the broccoli with a little salt. Set aside.
- Quarter the apples. Remove the core. Cut into small pieces. Mix in vinaigrette to prevent discolouration.
- Rinse the quinoa under cold water before cooking. Cook in approximately double the quinoa volume.
- Quinoa cooked once the seeds open up; drain in a sieve and using the back of a spoon press the quinoa tight to force water out.
- Leave quinoa to cool.
- Pomegranate is prepared by cutting it in half…. turning it skin side up and hitting the fruit with a wooden spoon till all the seeds drop out (over a bowl). Pick out any white membrane that drops into the seeds.
- Toss the quinoa with the apples, broccoli and lime vinaigrette.
- Serve with a sprinkling of the pomegranate seeds.
